Sunflower Spread / Salad Dressing

Recipe:

  • 1 cup sunflower seeds ( roasted or raw)
  • 1 ¼ cup water
  • 1/3 cup lemon juice (fresh)
  • ¼ onion
  • 1 teaspoon salt  (level teaspoon)
  • 4 garlic cloves
  • Nutritional Yeast (Nutri-yeast) to taste.

Spread:

Roast sunflowers first.   Then mix all the above ingredients in a blender.   To make it a spread, add some coconut oil.   Once blended, add to a container and put in a fridge.  Allow to set.

Salad Dressing:

The sunflowers can be roasted or left raw; it depends on your taste.   Then mix all the above ingredients in a blender.  You can add more liquid to make it more pourable. 

I like a more tangy spread or dressing so I add a bit more lemon juice and I also add honey.
