
- 500g Potatoes
- 1 teaspoon Salt
- 1/2 cup (60g) cup Cornstarch
- Oregano/Parsley/Coriander or any fresh/dried herbs of your choice (optional)
- Peel and cut potatoes into small chunks.
- Fill a large pot with water, add 1 teaspoon of salt.
- Add potatoes and bring to a boil. Cook until for tender, about 20 minutes.
- Drain and transfer to a large bowl, add salt ( add herbs if you choose). Mash the potatoes into smooth puree.
- Add cornstarch and mix/mash. This forms almost a dough texture.
- Put the dough mixture into a sturdy plastic.
- bag/sandwich bag, roll mixture out flat inside the bag. Its your choice how thick you want the chips.
- Put the rolled out potato mixture into a freezer and freeze. (approximately an hour)

- Once frozen remove from freezer and take the plastic off. (Be careful as the potato mixture is brittle.)
- With a sharp knife or dough cutter, cut long strips of potato mixture to size that you want for the chips.

- Fry mashed potato strips until golden brown. Transfer to paper towels to drain excess oil.
